Workflow Trigger on creation
I think I know the answer, but is there a way to trigger a workflow when an element is initially created in a default status?
Eg, a Prep sheet is made, email dialogue box pops us to email the team and let them know its now available to be picked?
If not, would Zappier pickup on the generation of the picksheet? at which point we could use that to create an email notification?

The answer here really depends on the full context. If you're creating a Pull Sheet from a Quote, yes, you can customize the Workflow Action (i.e., Generate Pull Sheet) to include an email Workflow Job. If you're "just creating a Pull Sheet" from the new element menu, no, that is not currently possible as it does not interact with the Workflow system.
For what it's worth, the only way to incorporate Zapier is via Workflow. If there's no Workflow Action, no Workflow Jobs can be performed, therefore, it's not possible to trigger anything through Zapier.
